I missed that it came with a 4 holed gasket. I wonder why? Either way, the plate is what I was mostly referring to. You'd need one of these to go onto the Offy C (whether you use this or a 4bbl):

I like spacers with individual bores vs. a single opening. Seems like the carb gets a better vacuum signal and runs cleaner.
You'll also need rig up a way to mount the throttle cable. I use a Lokar bracket and the stock cable with an Edelbrock 4v, but the primaries on a two barrel are ~1" back from a 4v and it wouldn't open the throttle all the way when I mashed the pedal.
There should be a raised number on the outside of the bore behind the throttle lever - 1.08 or 1.12, maybe? That's the venturi size. Check the FSP FAQ, IIRC the someone listed the cfm conversion chart.
Well..turns out the whole carb is a frankenstein...holley on the bottom and motorcraft on the top. Lots of jerry rigging too..so I'm goin to probably go with a holley 390 or edelbrock 500 ..any good preferences?

I don't think that's even possible. A motorcraft 2V carb has a one piece base plate and main body with a removable top. You sure it's not just a Holley that came stock on a Ford?
If you are looking for an Edelbrock 500 cfm carb I've got a used one I'd sell. I even have a rebuild kit that goes with it. I'm going with 3-2V's on my 300 so I don't have any use for the Edelbrock. If you have any interest in it shoot me a pm.

Right, so with the 2bbl the throttle plate is centered on the plenum - about an inch closer to the firewall than a 4bbl. That Lokar bracket doesn't have a whole lot of adjustability so with the stock cable there isn't enough travel to open the carb all the way.
The solution is to mount the stock cable back ~1" or get an aftermarket cable. All Ford cable regardless of length are going to have about the same length of pull.
I'm running a 390 Holley on my "C". It runs pretty good, finicky on the choke adjustment and the fuel mileage sucks. That old truck is a long ways down the list of getting attention but plans are for a 2 bbl. swap. Either a Motorcraft 2100 or a Rochester 2GC.

Your fuel mileage would probably be much better with a larger 4V. I feel the 390 is too small for the 300.
