Cold soak numbers

So some days when I check my eot and ect after a cold soak they match. And some days I check and the eot will be 63.1 and the ect will be 60.

How do I know which one is going or which one to replace?

Also I know they are the same sensor, but where are they and are they easy to replace?

Also, on a normal day driving at 70, my ect runs about 188. Should I be looking at changing the t-stat or could this me the sensors?

The sensors are not mil spec. 2 to 3 degrees is probably with in spec.. Your coolant does seem a little low. I normally run 194 to 204 depending on ambient and empty or towing.

I would change your t-stat, mine was running about 180. After replacement it is at 190-195. Here is a photo of a V10 & 6.0 T-stat, shows how big it is!
