I realize we are in winter, but my eot and ect's are both within 2-5 deg's of eachother and range when warm from 172-176 degrees. I like the delta spread, but the temps are running cold since the ambient air temp got cold. Last summer, esp when towing they ran normally 190-205 and had a 5-10 deg delta towing. Why does this truck run so cold? Btw, I did a coolant flush and replaced the thermostat last summer.

Sounds to me like you have a bad thermostat still. Just because you put in a new one doesn't mean it can't be defective. Temps should be around 190-195 ECT even in winter.
I want to throw this idea out to ya'll. What if the VS fan continually ran full out? Would that be pulling the temps down? Is there a sensor that might have gone bad? What should the FSS rpm's be a idle?

IMHO a fan, even as large as this one is, shouldn't be a real factor at highway speeds. You could have a bad fan sensor but it would probably throw a code.
