2006 f250 tire and wheels
Factory sizes were:
265/70R17 (~31.5x10.5")

275/70R18 (~33x11")

275/65R20 (~34x11")

How big is going to depend on what kind of wheels you're using. I run 34x11.5" stock with no rubbing, but 35x12.50s rubbed with a 2" lift because the wheels pushed the tires further out. Assuming stock wheels, I'd say 34.5x12" (or a metric equivalent) is a conservative "safe size" guesstimite that would work on the majority of the trucks out there without modding. Factory 17s are 7.5" wide, factory 18s and 20s are 8" wide, so a 12" tire is pushing the edge of what the rim can handle.

With the stock 2007 wheels, I went to a 285/75R17E BFG T/A KO. It is about 1 inch taller than stock. You should talk to your tire shop, but most shops are hesitant to put anything wider than a 285 on the stock rim. Some will go to a 305, but not many.
