The door latches on my '82 are all missing the bushings around the pins/studs. Where can I buy new bushings, and how much of a PITA is it to replace them?
If I understand what you're describing maybe look at the Dorman catalog as they have a ton of parts like this that Ford either never sold separately or has long ago ceased offering as repair/replacement parts.
Just grab a couple at your local parts house. At my local Autozone, they were only $9 each, easy to replace, and the silence is great!
Just don't over tighten them, or you'll be buying them again. (Ask how I know )
Take note of the paint marks left by the originals for alignment purposes, as the doors can be difficult to open if you get them off by much. (Again, ask how I know...)

Great follow up DK! IIRC there is a floating nut plate these thread into which do allow for adjusting the strikes to individual doors. The bigger concern is stripping those threads as those plates aren't the easiest to change.
Yup, those floating plates would represent a giant problem to replace, so don't strip them. That said, it's a pretty good sized (3/8, 7/16?) coarse thread, so I believe it would take a colossal amount of not paying attention to damage them, but if you're in the rust belt, that may be a bigger issue.
My first set, I tightened them enough to deform the black plate you see in the pic. That caused them to loosen up while driving, which cause the doors to not open. That was a PITA. I wouldn't recommend that.
