I'm going to use 07 Taurus power bucket seats in my 55 F100. There are a wack of wires in the connector for each seat. My question is, all I need is the power and ground to them, what are all the other wires used for besides seat belt warning and seat belt tightening device on impact?

Wiring diagram for both seats for the motors.
Drivers seat wiring.
Passenger seat wiring.
Seat belt alarm and impact tightener for the belt.( 4wires)
Looking at the seats I see no Air Bags, Lumbar is manual, and the connectors are different on both seats.

The seat controls are on each seat so my thinking is to just run the power and ground to the seat control wires and leave the rest unless I can get a Ford manual that shows the uses for the other wires. I won't be able to use the impact part of the seat anyway, buzzer/light not happening either and just maybe they are heated which would be great!
Any tips on how to start to build the mounts for these?

I'd drop by a Ford dealership and talk to the service department and walk away with the answer. It doesn't look like there is any control buttons on the side of the seat so I'm guessing the wires lead to the switches. I've got seats out of a 93 villager van that has only 2 wires but the controls are on the side of the seat ( 6way plus power lumbar). I do like your seats and should maybe do some more shopping.

Good idea! The controls for the seats are on the side, that's what has me stumped!
They could have had seat memory, also like someone else said the could be leads to the back rest tilt, front /rear base tilt (which also do seat height) as well seat position (forward/ back). Seat pressure switch for seat buzzer (not sure if this was mentioned or not)

yeh,, except for the memory, all those switches 'should be' on seat AFTER the connector..
you would think.. power & ground to the connector, and power to the switch(es), and lots out of the switch(es).. all self contained on the seat.

I'm thinking one set is going to be a heater from my memory and the looks of it, the yellow plug with only a couple wires - the sables and top end taurus had heated leather seats (I loved my mom's 92 sable). another is going to be passenger airbag sensor (i.e. the scale that weighs the passenger to decide if they are a 12 yr old or an adult) 07 in new enough it's got em.
seatbelt buzzer on both - they were long since mandated by that age.
some things you can do to figure it out - what does the pass have that the driver does not.... that will be the scale.
I tried googling a bit and found two car clubs, shoforum.com and taurusclub.com
but didn't come up with a good diagram in a few minutes - if you'd rather search online than chat up the service desk guys you might try googling around those forums.
Cant really read your schematic photo. Go to a friendly dealer service dept and see if the will download and print out the pertinent wiring diagram for you. (A box of donuts opens a lot of doors...)
Shim the seats until the height is appropriate for you with the seat in mid adjustment range. Don't be in a hurry here, sit and pretend to drive for ~ 1/2 hour or so, reach around for the controls and check the instruments, rear view mirror, view over the hood and corners, longer term comfort etc. Once you are satisfied Measure the space between the seat mounts and the floor, and build a set of spacers or mount to those dimensions, I built mine out of 1" square tubing in a square shape so they bolted to the seats and the OEM floor mounting points. Make sure the mounts are strong and use 4x4" x 3/16" thick backup plates under the floor if the bolts don't go thru a crossmember. There can be a great amount of force trying to rip the seats from the floor in an accident and you don't want to end up with your torso between a loose seat and the seatbelt, you will lose! Use grade 8 bolts, washers and nuts to mount the seats.
My seats are van type captains chairs with 6 way power. There is just one fused power lead from the fuse box wiring to the seat switches, the ground is just a chassis ground. You can chose to wire a ignition hot or always hot lead depending on if you want to be able to adjust the seats only with the key on or at any time.
