Well, as long as your taillights stay on this is normal...that's the way Ford wired it. My 69 F250 does the same thing.

So what if I put in cab lights? Do I need another switch? And can I wire my park lights to stay in with my head lights?

They can be wired to to the later arrangement, and add cab lights. Someone with a set of diagrams should be able to tell you exactly how to wire.

What do you mean by cab lights? Extra driving lights on top of the cab, or an extra interior light in the cab? You should already have an interior cab light...it comes on when you rotate the headlight switch **** all the way counterclockwise.
If you mean extra lights on the cab...yeah, you can do that but use a new/separate circuit and switch for that...the wiring in your truck is 43 years old and brittle and finicky...best to not disturb it.
As for wiring the parking lights to stay on with the headlights...it has been done and there is a thread on here somewhere...use the Search function...as I remember it required using a relay of some sort. Again, when old wiring works okay it's best not to tamper with it IMO.

So if I use a newer switch and not even touch the wording they will come on still? Say like a 78 light switch?

I doubt it...lots of changes between 68 and 78. Don't know for sure but I would bet the switches and wiring is way different. 68 through 72 is pretty much the same, 73 was a transition year, and 74 through 79 were dent-side trucks...lots of differences from the 68-72 bump sides.

Search the forum for headlights/parking lights...there's a thread on here that tells you how to wire in a relay to get what you want.
