When I bought my Ex 12 months ago, my t-stat was bad, didn't know
until I hooked up my SGII also.
ECT would only get up to 178 to 184 sometimes.
Change the t-stat first. Then check your delta on the highway.
I wouldn't do a flush until after you change the t-stat and make
sure you don't have bigger problems.

Just drain same coolant from the radiator drain plug into a clean bucket
so you can pull the t-stat w/o making a mess, then put back the
coolant you drained and test it out for a few days. Plus you'll get to
see how the coolant looks.

EDIT:
To the original poster: How many miles do you have on your 6L?

My truck now has 83xxx miles on it (77xxx when i got it). i must have let it sit longer than i thought yesterday before i got the sgII installed and codes put in. today on the way home from work with outside temp at 80F. my ECT was 190 and my EOT was 198 doing 73mph. for about 15 miles. so my thermastat is reading high enough. now i just need to make a long drive at 65mph and see the true number don't yall think?

Yep, if you're getting up to 190 that's good. Your thermostat should rarely let it dip too far below 190 even on the coldest days. 198 EOT doesn't sound bad at all. You'll get a better feel for the temps after you drive some more. Be careful and don't keep your eyes glued to the gauge!

The other item you'll want to watch closely now that you have the SG II is the FICM main power. Turn on the gauge by hitting the lower right button circled in red and switch to your FICM X gauge. Watch it as you crank and after the engine starts. Should stay right at 48 volts. FICMs having issues will drop below 45 volts - usually when cold.

That's great... Mine will drop briefly to 44.5 in the morning cold, but then sticks to 47.5 - 48 the rest of the day.

That's NOT normal, Alan. Bet if you reflow the solder on the circuit board it's fix that problem.

I was just considering that this morning as I nervously watched it dipping down for a few seconds... It just started that about a week ago (it's cold here in LA - temps down to 48 at night ).

48* is still shorts weather.......

FWIW--I would verify the voltage with a DVOM and not rely totally on the SG2 for 1/2 a volt.
