Previously I had a 2002 F350 with the 7.3 and am wondering what would be the differences between the two motors?

Off the top of my head, smaller injectors, smaller HPOP, no intercooler, not sure if 02 had electric fuel, these trucks have mechanical fuel pump. Someone else should chime in if I missed anything. You won't have any problems towing bikes.

Single shot injectors on the OBS whereas the '02 has split shots, no AIH (Air Intake Heater), there are some more minor differences in the accessory drive system, but those don't really affect the function of the engine. Also the OBS trucks have vacuum assist brakes whereas the SD has Hydroboost brakes that run off the power steering pump. The OBS trucks fuel system is different, and has a different filter setup and fuel pressure regulation system. That in addition to the differences noted above it about all I can think of.
