Did some data runs today after doing my EGT probe install. Really neat feature, but alarming data as well (sorta)
0mph with WOT to 60 mph: Rockets from 200F to 1400F
30-35 mph cruising in town: 400-500F
55-60 mph cruising on highway: 550-750F
550F on level ground
fluctuates from 550-750F with minimal change in grade (low boost). coasting downhill saw 400F a few times
While accelerating, it is typical to see 700-900F with minimal throttle. Once you reach your desired speed, the temps drop out quickly. Is that normal? Seems really high when most people quote 1,200F as the upper limit. Truck is bone stock from intake to exhaust tip except for Kitty delete and Gearheads SLR tune.
I'm hoping to get 100F drop once I install the downpipe
Muffler is coming out also soon. Going to take it in steps so I have a trend track to see what works and doesnt for dropping EGT
Edit: BTW, I dont go above 60 mph out here. Speed limit is 55 mph and I detest tickets. Truck is kinda obvious when speeding. So won't be able to get that data

That's the same thing I see, and I've had the same set-up as you (with the exception of the missing cat) for a year or so. Hitting 1400* for short periods of time isn't a problem, but sustained operation at that temperature is something you'll want to avoid.
Our high temp is more like 1400..... When I tow, 1000* is pretty normal to see in a very slight incline. BIG hills I've seen 1300 a lot..... but it drops right off quickly when it drops a gear.....After seeing what I've seen since I've had the truck (05), I now seldom even look at EGT's anymore! The truck is smart enough to keep me safe!

That's why you don't tow with those tunes.

With stock tuning, I agree. Them boys ^^^ ain't running stock tunes. About 1300° is all I see with stock tuning and it takes pulling a load on a good hill to see that much. The truck will either downshift, or I will back off a little right around there.
I bet they are not affecting it much. A hot tune is going to bring higher EGTs. I am curious how your EGTs drop once you put a different exhaust on the truck.
Like Steve said the 1,400* EGTs for a short burst aren't something to worry too much about.
