engine overheating

I must be fan clutch tone def cause I have 2 7.3 IDI's, and I had a chevy 6.5TD and I've never heard the clutch kick in on any of them. The IDI's never run hot but the 6.5 did all the time. The only vehicle that I have ever heard the clutch kick in was a 2007 cruiser I had before I got the 2010 I have now. It definitely sounded like a jet taking off!

I went and installed a Motercraft t-stat and things seem to be working! I run between 190-215! I didnt pull a really heavy load yet but i was pulling a 3 ton flatbed trailer and didn't have any problems! Thanks for your ideas!
