Just finished with my 460 engine swap, and when I started driving the truck, my oil pressure was rather high. During normal idle, it hovers just before the top end of the normal range. But after some highway driving time, it can get up to just above normal range.
The stock gauge won't tell you much. "Just before the top of the normal range" is subjective; it doesn't mean the same thing from truck to truck. To really understand what's going on, you should install an aftermarket mechanical gauge. But as a first pass, if you want to troubleshoot the system you've got, the sending unit may be off. It's normal for oil pressure to decrease once the engine warms up, but your sending unit may be adding an offset.
Not to sound like a broken record, but you need to install a mechanical oil pressure gauge to get an accurate reading, i wouldn't trust the factory gauges on my riding lawn mower.
Could it maybe be because of too much oil? I put the recommended 6 qts in (fresh, blueprint engine), but I don't have a dipstick, so I don't know if there's too much/little oil in the system
The amount of oil doesn't have anything to do with the pressure, to a first order. It's not like it pumps more oil more quickly because there's more oil in the crankcase. Oil pressure is a function of the force delivered by the pump, and the resistance to flow presented by the engine (i.e. bearing clearances).
It is possible that if the oil level is too high, the rotating assembly will actually churn the oil in the crankcase, which will aerate the oil. However, this decreases oil pressure.
Like MH said, there's really not much you can do until you have the proper diagnostic tools. How much PSI do you have if the needle is between the "A" and the "L" in "NORMAL?" Is it 40 PSI? Is it 45 PSI? I don't know. I would definitely be using a gauge if this is a rebuilt engine with money invested.

Alright. Don't know when i'll be getting gauges. Bought the engine for cheap ($800 with a trans), and the po had all the money invested for the rebuild (about 5k with the goodies).

Aftermarket dip sticks for the 460 are few and far between and the ones that are out there are close to $100. The wreckers wouldn't sell me one because they were trying to sell the complete engine. I ended up going to a pick a part and getting one, $2 I think.
Now the timing chain cover on the new engine has a factory intalled cap over the dipstick tube. I have another timing chain cover (identical casting number) that has the dipstick tube in it. Is there a way to get the tube from one to the other?
For a cheap oil pressure gauge.
Buy a Mechanical gauge, Autozone or off of ebay. I like Stewart-Warner and it doesn't matter what size. Then buy a flexible grease gun hose. Screw these together with a female adapter. Then the hose end will screw directly into the engine block in place of the oil sender. I have used one for years to check oil pressure on different engines.

a general guideline you want about ten psi for each thousand rpm
