Let's talk size first.
With a 2-3" leveling kit, you can fit the equivalent of a 35" tire in the wheel wells. With metric sizing...there are a variety of sizes that will work also depending on your wheel size.
On to tire choices.
What kind of driving and how much off roading are you doing? Do you need a dedicated mud terrain, or will an all terrain suite your needs? Are you more concerned with how a certain tire "looks" or is performance and ride characteristics more your priority?
33" or 35" tend to be the norm for people with ~2.5" levels/lifts. I have a 2.5" level and 33" and love it. Perfect size in my opinion. I have very aggressive tires though (Toyo M/T), but it makes the truck look so beast! Of course, it really all depends on how you'll use the tires and how much your willing to spend. The bigger the tire and more aggressive tread it has, the more money your going to be spending. Check out my garage is your interested in some pictures.

I'm going to watch this thread closely. My 07 will need new tires before the snow hits the roads. Honestly, I'm inclining toward the BF Goodrich TA, it was on my 02, and after 60K miles, it had couple thousand miles of life left before trading it. Best tires I've ever owned. Might get 275/70/18 for my 07, want a taller tires but no impact on gas mileage as it did impact on my 02 with 285/70/17.
According to the lift I can fit up to a 33" tire on there, I would like to keep it under that, just looking for all around good A/T. Right now I have 275/65/20 size looking at the NITTO AT, or the bridgestone Dullers.

With that said, a 275/65/20 should fit with a 2.5" level using the factory 20" wheels. You haven't told us what wheels you have.
The Nitto Terra Grappler is a good tire. So is the BFG All Terrain K/O. As well as the Toyo Open Country A/T, the Michelin LTX M/S2 and LTX A/T2. Cooper makes the Discovery ATR which is another good choice, or even the Zeon LTZ which is a hybrid all terrain and sport truck tire that I too considered but ended up with the Michelins instead.
I run 275/60/20 on factory 20" wheels without a leveling kit. They fit just fine, don't rub, and are within spec enough that it did not throw my speedo, tach, and trans shifts off enough to matter.
A 275/65/20 will likely require you to address those three areas I just mentioned.

Right now I have firestone destination on there they are an ok tire but just looking for something a little more aggressive, I drive mostly street but do like to hit the trails and some mud now and then and we do have snow around here so that another key fact, im likeing the NITTO because they hae some good reviews and are the cheapest right now.

I run the Nitto Terra Grapplers and over the years these are the best tires I have owned in my opinion. When I get new tires next I will be sticking with Nitto but going to the Trail Grapplers instead because I want something just a bit beefer then the Terra's are. All the tires listed here are quality tires you would be in good shape with any of them.
i also have the nitto terra grapplers, tire size is 285-65-r18. i have a 2.5" level kit on my 2004 f150 ext cab 4x4 and they look gooood. my buddy just recently bought some old nitto terras from craigslist with maybe 1/8 in of tread left on them for his 2x4 chevy silverado, same size, different rim (16") because he wanted his truck to look like mine. nitto makes a good tire
I also have Hankook dynapro ATM's (larger size, cause I also have a 2.5" leveling kit up front).
I got very decent milage out of them so far!
Ford dealership charged around $1000 total for 4 tires mounted.
They are a All-Terrain type tread, I hardly even used them off-road, but still got tons of use out of them so far.
Does anyone have suggestions for a true highway tire (in a 33" diameter)?

CM, I don't know what your going to do with your truck- kind of restricts good suggestions. When I lived in central TX I spent a good deal of time travelling on rocky roads and found the triple sidewalls of the BFG AT-KOs to be very resistant to sidewall damage. Very few tires offer triple sidewall construction. (I still carried two spares out there!) They are on the pricey side though. Now my off road requirements are for sand and mud so I don't need the sidewall "insurance" and use less costly tires. Lot's of people have favorite tires because of the "looks" of the tire tread, etc. There are several sites/forums that have tire test/recommendations/ratings that you can do a little research on.

Nitto has a newer Dura Grappler that is highway biased. Toyo and BFG has options as well.
The Dura Grappler is a street tire and a nice one from what I have seen for trucks. I want to say that have another one too that is called something else and is not a grappler tire but still a Nitto.
The Michelin LTX M/S2 is an "all terrain" that is more highway biased. I run them and love them. The wet and snow traction is superb, and they are very quiet. Not to mention they carry a 70,000 mile treadwear warranty from Michelin. They are quite spendy though...just a heads up. But they are a wonderful tire. There are pics of my 275/60/20 in my gallery.

I always used Michelin's on my old 1991 F150, and they were pound for pound the best tire I ever saw. (A+ in the Pennsylvania snow).
I just found myself using my truck for more highway use, rather than off-road, and was thinking why the heck did I buy a A/T tire from Hankook.
But I will have to check out those Michelin's you suggest, thank you so much!
