Although this is a pretty minor project in the greater scheme of things it has been an Achilles Heal of mine for my interior restoration work. Now thanks to my lovely wife and best friend who helped finance the seat project it is now underway.
After much deliberation I decided to restore the old seat Vs. buying a 90's era seat because I would like to be as authentic and period correct as I can. It will be reupholstered to it's original Ranger Lariat pattern.
Here's the before pix. I just removed the seat and loaded it in my Suburban when I realized I forgot to shoot a photo of it.
Even though I keep it clean its amazing just how much crap collects under the seat!

Are you taking it to an upholstery shop or ordering the foam and seat cover and installing it yourself? It isn't very hard if you have the proper pliers to undo the rings that hold the seat material on.
I have been seriously considering getting some new foam for mine as the upholstery is still mint, it is just sags on the drivers side like an 900 lb gorilla used to drive it.

I just dropped it off at the upholstery shop this morning. I thought about doing it myself however I haven't been able to find an exact pattern match and the kits may lack some of the original detail that I'm looking for. I'm being really picky about this.
The shop that is doing the work always has someones restoration project in the garage. Today they had a nice 68 Camero being worked on so I trust these guys.

I'm actually getting kind of torn between getting a Lariat seat re-upholstered and using a 90's seat right now, just cause I want the Lariat badge to shine like no other on my 78/79... and I really like the old style look that Lariat seat (yours) has.

I don't mind. the seat will cost me $500. It's a little high but this shop is somewhat famous for old car restoration work here in town so I'm quite confident it will look great.

I was in the same mindset. The 90's seats looked pretty good and I'm sure 100 times more comfortable especially with the center fold down arm rest BUT they didn't have that in 1979 and the original Lariat trim and pattern is one of a kind so it is worth preserving.
This is sort of opposite direction of this conversation as I am trying to get my truck up to snuff on a budget and a decent used seat from a newer model is likely to be cheaper than redoing the old seat.... The newer bench seats do bolt right in, correct?
That's actually not too bad of a price at all Steve. I was expecting 700-800. 500 is worth the trouble of getting it out and to them so they can do it professionally. This way you won't have any imperfections you know are there cause you didn't do it yourself!
I think it's best to let the pros do it. Even if they mess up, I bet anyone on this forum would be hard-pressed to find that small imperfection. It should look good!

I believe it's around 98-99 where you will have to start fabbing up brackets and different mounts for the seats (not hard, but you definitely need a welder and some skills with it).
Everything from 98-99 and down should bolt right in, but don't quote me on it.
I just stopped by the shop after lunch today and they already had the cover off and where starting to seem up the seat pattern. They move pretty fast so I didn't want to get in the way or ask silly questions. The materials look really good and I can't wait to see the finished seat but I will have to wait until Friday.
A month or so I had my seat done. The local shop charged me $225. Its a two tone vinyl close to the original. I also had that same 800lb gorilla sitting in my seat. The boys replaced the foam. I bet you are pumped to see that seat when its done and I'm sure it will look great in your dent.
I am very excited to see the finished product. As I said before it is a small project but it has a high visual impact and one step closer to finish my interior. Dash pad and instrument trim is next.
I think that gorilla gets around because he's been sitting in my seat too!
