to take the rotor off the caliper has to come off, and for the parking shoes to be available you need to remove the 8 bolts that hold in the axle shaft and pull it out
I personally use a plain old Chilton manual. Here's a good thread on the parking brake assembly. Just went through my "new-used" truck this week -- all new rotors, calipers, pads, shoes, and flushed the system. Stops on a dime now, which isn't easy with a truck this heavy, LOL...

yet, I've loosen the Rotor (yesterday was Sunday) and see that the shoes are in very good shape (like new ones), is there any possibility to adjust the parking brake ?
I think it is not necessary to change the shoes, when I can adjust the brake, but I didn't know how it works
There's a thumbscrew you can spin on the adjuster block on the bottom between the two shoes. See the pictures in the above mentioned thread. Spinning that thumbscrew decreases the distance the shoes have to travel before engaging the drum part of the rotor.
After reading through a lot of posts, I could not find a solid answer on which way the star was to be rotated. On my 2000 F250 SC SB 7.3 diesel the star was rotated in the downward position on both the driver and passenger side to tighten/expand the brake shoes.
