I just did mine and installed my 2008 diff cover and used Mobil1 75w140. That stuff works great btw!!!
One suggestion: get some brake cleaner and spray your diff out! When I did mine, it hadn't been done since February of 2009. Not sure if the last shop used the wrong fluid or something, but mine had A LOT of gunk on the cover , the gears, and the oil looked REAL bad. So get the gunk off the cover with brake cleaner, spray the innards of the diff off, make sure you mop all of it up with a shop rag, then go from there.
Mobil 1 is great as is Amsoil and Royal Purple. Just a bit expensive at $18/qt but you would be amazed at how much a difference it can make. I would not use the O-Reilly brand gear lube. This is an item that doesn't need to be done that often so I would pay for the good stuff so as not to worry about it for awhile. I've got to do the fluids in both diffs for my truck that I just bought used and I'm not exactly looking forward too what I'll see when I crack them open...

What kind of difference do you notice between brands with differential oil? Is it lighter?
Better quality and can help a lot with any noise that might be present. Oh yeah, also pick up some friction modifier for the diff. One 4oz bottle per differential.
Mobil 1 comes with and without friction modifier but you won't need it unless you have an LS rear end and I doubt if you will actually notice any difference by using a certain brand. All you would "gain" by adding modifier to an "open" rear end is stinky oil and a lighter wallet but it won't hurt it mechanicaly.
