Transmissions
Hello, I am new to this.
I have a 300 for a 1966 f-100 project. I was wandering if a T-5 or T-56 mustang trany would bolt up to the 300?

Affirmative, if it's from a V8 Mustang. But you'll also need a new tranny crossmember and shorter driveshaft.

That is true, but i was also wandering if the bolt holes would line up from the transmission to the 300 block.

Look here at the WIKI info if it is post '64 6 bolt pattern your good to go.

You will need an adapter for the t-5 and I think for the t-56 also. I am unsure if they are the same pattern...
Ford 240 6 Cylinder with a 5-speed? - THE H.A.M.B.
Match a clutch with the correct diameter and spline and you should be good to go. You may also have to visit the clutch linkage. There are after market master/slave hydro's that would hook ya up. I think the easiest way to approuch the linkage would be to use a t-5/t-56 bell housing.

The 300 and 302 have the same bell bolt pattern, it is a direct bolt-on with no worries if you plan to use a hydraulic clutch.

2.90 gears
60 mph
=
1420 rpm.
Might work if you live in flat country. 3.0s or 3.25s might be better depending on your tires.

2.90 is an awfully high rear. I'd highly recommend going to the 3.55 rear. With that big overdrive you'll run fine at speed without losing all your acceleration.
What size tire are you running?

Spot on.
Driving 60 mph on the highway will get you dog cussed pretty good down here in Texas. I don't even shift to OD until she breaks 70.
Seriously though, what sort of project are we talking about? Cruiser? Hot rod?
Work backwards from your desired rpm at cruising speed once you figure out the tires and tranny to select the R&P.
