I'm taking for granted that your truck is a 4x4 with leafs on the front since you didn't say.
My stock wheels on my 97 F350 had 4" of backspacing. If you are going with oversized tires you are going want to stay with 4" to 4.5". I'm running H2 wheels with 35s. The wheels have 5.5" and the tires rub like crazy on the leaf springs. I have a set of 1.5" spacers on now and, after some bumper trimming, they clear everything. Careful. Most aftermarket 8X6.5 wheels now a days are made for late model Chevy's and Dodges and have way too much backspacing for our trucks. Though, I guess, if you're running smaller tires than I am you can get away with more.
I'm looking to stay with the factory size tires until they wear out. The wheels I'm looking at are 16x8, which is an inch wider than stock. They also have 4 inches if backspacing with 13mm offset.
With 4" of back spacing a 8" wide wheel will be 1" closer to the outside of your truck than the stock wheels. If you are going to stay with the stock tire size and have no plans to up size later you may want to slit the difference and go with something closer to 4.5. That will keep the tires in the wheel wells. But the 4" should work fine
