According to my gauges it takes my truck about 12 miles at 65 mph to totally saturate and stabilize.

About right.

I am talking about warm enough to see the gauge about 3mm below the "max" and stabilize.

To reach your point, that is 12 miles --- and on the coldest days, that can be never unless I use a bubba shield.

I wonder if we can get a real time mileage measurement at each plot of the ECT and EOT and run a graph.

Notably, when mileage tests are done at EPA, I do not believe they factor in warmup, or DPF regen (not applicable to us... but still).
