The few times I've had those exact symptoms it was a blown fuse. I've never had it start working on its own again though. Maybe check your fuses to make sure the one that controls your gauges/dash and the accelerator isn't loose and is seated correctly.

I had it happen once but it was on a 6.0. My batteries became disconnected from one another. The positive/crossover cable broke at my passanger side battery. The alt was keeping up the pass. side battery and truck started that morning but the drivers side battery was dead or almost dead and caused all kinds of strange things to happen with the computers. I could see someone with dirty grounds causing the same kind of thing. I don't know if any of this would apply to a 7.3.
