Did the weather change a bunch when you changed the oil and filters? If the noise started right after the oil change, it might just be the oil. I've tried several different oils in my truck and can hear differences in the engine between most of them. Perhaps your truck had synthetic oil in it before and the change back to dino oil is making it seem louder.
Temps also affect things. The 7.3 sounds a little different in the winter vs. the summer. Also if your local fuel stations switch over from #2 summer to #1 winter fuel it can affect the sound of the motor as well as the mpg's.
