I mean do you have any $ saved up for the engine? do you have time to rebuild it? or do you need it right away?
My thoughts if you have space and the knowledge to tear it down your self then take apart the motor find a competent machine shop, have them clean and bore the block, have them put in your cam bearings, freeze plugs, you will have to have the crank machined and your rod's reconditioned, the proper pistons for the new bore space,you can reuse alot of stuff but if you have the funds its always good to upgrade to ARP hardware for your bolt's.
Then decide on rebuilding your heads, or you can go with some E7's which came on 5.0 liter mustangs and '86 up ford trucks and van's or later explorer's which used heads similar to the GT-40, if you have access to a good salvage yard.
So 302, bored 30 over about 306 cubic inch's, a cam like the B-303, around .490 for lift
some decent head's, and edlbrock rpm mainifold, 600cfm carb and some shorty headers
you should be looking at a decent 275-300 horse around 300 lbs torque, enough to make most vehicles haul good, even a truck with a little more rear gear.
