Before you retighten the U bolts (are the nuts bottoming out on the threads with the thinner springs? Did you replace them with new ones with longer threads?) or have it aligned, slip in a pair of tapered caster shims oriented so the top of the axle tips back more. You definitely need them with leafs removed. That alone will make it steer better.
