I did it on the mustangs cause i dont have that luxury, taller valve covers(which i dont like btw) mean an intake spacers, which means a cowl hood, which means paint etc etc.
Plus i'd rather buy another set of $10 gaskets then a set of $70-100 valve covers that i dont need. Chances are they will clear, just for some extra spacing an extra gasket works. Especially if it comes down to driving the truck or waiting on summit.
Thats cool , i just do it the other way around , tall covers , intake heat spacer , adds a little runner length helps keep the upper cooler , 2in cowl hood also helps keep it cool , thats the way i have allways done it , just me ....

I've never seen performance gains from an intake spacer. I didnt want a cowl hood on the race car, that would create a high and low pressure area in the engine bay. Foxes have it bad enough with the high pressure area that lifts the front end at 130+ That would hurt areo dynamics. And again I hate the taller valve covers. The street car though has a cowl hood, I just like the short valve covers, and spending less money when I can.
If it was a all out drag car i'd see no reason not to do it your way though.
I don't know if theres any gain from the spacer , not something you can feel from the seat , i like the tall welded covers , they have the allen head bolts that go thought the top of the cover and seal up nice , easy to get to when you need to take a look , they don't come with any holes so you can drill them where you want , i just like the clearence with the 1.72 scorpion RR and screw in studs
My 1.72 SVO rockers, with studs on my X heads cleared the stock fox valve covers after some work. I could say i did it for the sleeper look but that kinda dies when you have a blower and aftercooler crammed into the bay
FYI, on a 302, even with a intake spacer, it should still clear the stock hood. The 351 has the same intake, and those motors sit almost an inch taller.

I think we were talking fox body mustang hoods , the truck has no problem with clearence ...
