Hydroboost power steering contamination

Ive read a number of posts about flushing /filtering the ATF from the powersteering system to clear up various hard steer problems. What material exactly is it that is contaminating the fluid?

Mine was water. Making noise, but no hard steering. Did the flush according to a thread on here, and added a can of Lucas P/S Fluid. Been steering quietly for over 2 years now.
