From what I have gathered, it would be very tough. I am currently swapping the body from a 2000 Gas v8 Excursion to the chassis of a wrecked 2002 Diesel Ex. And even though I'm leaving a ton of stuff attached to the diesel chassis, there is still a lot of differences between the two.
One issue you will have (that I am also dealing with) is that the wiring harness going thru the firewall is a different configuration between the 2000 and the 2002 (and 2003 I assume). Also, you will have to remove and swap the whole dash assembly from the diesel, so that it will plug in to the engine harness (through the aforementioned holes in the firewall).
Fuel tank and fuel lines would have to be addressed too for your situation... and I'm sure there is more that I cant think of right now...
I would be interested in the same information. Around here the 7.3's go for so much that I could get a donor vehicle and hopefully do the swap myself. My time is pretty cheap during the winter.
If you have a donor vehicle it won't be impossible. It would be A LOT of work, but it's doable.
In addition to the engine you need the trans, the computer, the wiring to the engine and trans, the instrument cluster, and the front springs. I'm sure there is more, but that's all I know of.
