My truck has the 300hp 6 in it. I changed the tank put new carb on it and went to electronic points b. Truck start and idles great in garage. when I go run it on hwy I get up to 55 and it stalls out. Got to choke just a little to fire it back up and it does the same thing.
You could also remove the line between the fuel pump and the carb and run a temporary line into a container and start the engine and check the output volume.
My first guess would be that the float level in the carburetor is too low. But you should check the fuel delivery as suggested in post #3. If you do that crank or run the engine for exactly 30 seconds you should get a minimum of 1 pint of fuel.

Since you eliminated the condenser, I would look at the coil next.
Some times when they get an internal short they will work fine at idle and lower rpms but as they heat up they short out and quit working, then cool down they will be fine again.
Had it happen on a Triumph Spitfire many years ago. You can do some research looking up the term Coil Saturation
@HydroDog Might be on to something. I assume you have a pertronix if you look at their installation instructions in the troubling shooting section, if you have the wrong voltage or the wrong resistance coil it can cause a start and idle but stalling at speed. You did remove the pink resistor wire, right?
Good thoughts above. Although it seems to be less common these days the Pertronix modules do occasionally have issues - sometimes only under load. If the stalling continues to haunt you it might be worth reaching out to Pertronix tech support. I've worked with a couple of guys there on issues. I recall one tech named Andy was very helpful.
