2007 F350 manual transmission, 6L turbo diesel. Just got a light on the dashboard with an "i" and a "P" and I assume is for emergency parking. As soon as truck starts moving I also get an annoying beep. Thing is, I took out the emergency brake 6-7 years ago since it rusted to dust, so all I may still have in there is a cable. My question is, where is that switch turning the light and beep on, and can I just take it out and insulate the wires?

Could be either the brake fluid level switch or the parking brake release switch input to the instrument cluster that is triggering the BRAKE warning. Since you said the audio warning sounds when you start moving, it's probably the latter.
There is a switch in the parking brake pedal assembly that feeds the signal to the instrument cluster. Look for a two-wire connector in that assembly and disconnect it, then secure the wires so they stay where you put them.
