When to strip to bare metal

Greetings body and paint gurus. I'm in the process of restoring my 1961 f100 flareside. The truck was originally white but has been repainted resale red. The bed/box needed quite a bit of work so I'm planning on media blasting, epoxy priming to seal and then redoing body work before having it painted a new color. The cab is in great shape, with only a few spots of peeling paint and only two of those are located where they are visible. I'm tempted to scuff and re-shoot even though it would be a third layer of paint. It would be a no brainer if the second layer wasn't adhering so well. What do you recommend I do. Any and all opinions would be appreciated. Tim

You have it right.
Only time I would strip to bare metal is if what you are painting over is not sticking to it's base, have rust marks starting to come thru and a lot of coats of paint and want to get back to crisp body lines.
On my 81 F100 flare side it had a few paint jobs in the factory colors and then a flat black over them.
When I got into it I found that rust was under old body filler making it check so it had to go to bare metal then treat the rust with an acid to kill it.
I then did what was needed for the body work up to painting.
