fuel gauge goes back to empty when I fill the truck all the way up.
does anyone else have this issues ? it goes back to full once I have used up 2 gallons ( from 36 gal to 34 )

I also had a similar issues years ago with my 2003 6.0L
The sensor is the same kind of deal used for decades; it's just a float attached to a sensor which tells the truck how much fuel is in it. Sounds to me like it's getting hung up somehow.
I'd verify the data with a good scan tool to rule out a gauge problem before dropping the tank to inspect the sending unit.
Interesting problem. I did have a GM vehicle do something similar to that. It would drop to 1/2 tank almost immediately after a fill up and then go back up to full. It was sending unit inside the tank - that was easy to get to as you could get to it form the trunk.
You are the magnet for fuel gauge issues though, since this isn't a problem I hear about all that often and you have had two ford with the problem. Trust me when I tell you I fill my diesel truck up ALL the way to the rim.
I as we'll had the same issue with my 2003 6.0, although it only happened when I filled the truck with the key in the "ACC" position. Never had the issue with my 2011 6.7L.
my transfer flow tanks digital gauge shows in gallons and shows 36 and keeps working that's how I know what level it is when the factory gauge starts working ( at 34 gallons ) but my phone using torque pro shows 0 % along with my factory gauge. so issue with my 03 it also had a transfer flow tank
