Actually the indepth changes can be on after you get your custom tuning. The main things is that the tuner(person) that you are going thru unlocks those options for you to be able to make changes on your own.
So if I want to be able to tell Eric I want these 3 tunes: X, Y & Z. These are the mods I have on my truck. This is the size of the 5th wheel I tow. Then have Eric dial it in to match my truck I would need the X3.

Yes, that is correct. However, I would actually mention the weight that you tow rather then the size. You could have a rather bulky fiver, but actually weighs a lot less then you would think. The converse of that could be true as well.
You did not ask, but do not buy the livewire from SCT, the performance monitoring set up for real time monitoring of guages is not worked out and the only support from SCT techs is to wait on an upgrade. Love the programs, but the guage function of the livewire is a pos.
Edge just recently released the new insight CS and the CTS for monitoring purposes only. I have the old Edge insight which i love but now that the new ones are out i would recommed one of the others. The CTS have a video input for a backup camera which is really cool. But bottom line is don't put a tune on your truck without having your gauges ready to go. You really need to be able to monitor your vitals.
I have the sct X3 with tunes from ID and bought from my local diesel performance shop. In addition to the canned tunes, he gave me economy, street and towing tunes. My question is can I tow an 8k trailer while on the economy tune ?

You can. Hell, there are people that tow 5k with race tunes. If you are easy and watch your vitals like a hawk, you could probably do that for a long time without issue. I wouldn't advise hauling with a race tune, but others have.
Sort answer, yes you can and you shouldn't have worries. Just always watch your vitals.

In fooling around with the tuner, I see that there is a menu option for "options" but it only seems available on the canned tunes. I have an EGR delete and i seems that if I load a canned tune I have the option to "turn off EGR" while I don't on the custom tune. In either case, I don't get the CEL but I get the P0401 with the custom tune but not the canned tune. Is this correct ?

Is the tuner of the custom tune aware that you have the EGR delete on there or even if you told him, make sure that he actually did turn the EGR off.
You can do options for both canned and custom tunes, however, the custom tune options have to be "unlocked" by the tuner that you use(the person) in order to make those changes. During the last days of Matt doing tuning with SCT products, he would "unlock" that menu option for users as a matter of course. Looking back on that, I wonder if he realized that the death knell was close to his relationship with SCT and that he wouldn't be able to offer support to his clients that have his SCT tunes.

What's the horsepower increase from the economy tune?
I thought none. I tow 10k with the economy tune and I don't have studs.

It depends. I've seen economy tuned mixed in with a tow tune and sometimes called Economy/Tow tune. Those usually max at ~40HP. This is the first time that I've seen an economy tune listed for ~10HP.
