I have 60K on my OE Firestone 265 75 R 16s and although they still have decent tread I will have to replace them in the next few months.
I'm considering 285s, but if I have to buy new rims that's out.
I'm also considering a more aggressive AT tread pattern; maybe BFG AT KOs or GY Wrangler Authority; the stock Firestones are all season.
I don't go off road much except on the beach once in a while.
I tow a 24' boat about four times a year.
What consequences will I experience with 285s?
What consequences will I experience with ATs vice all seasons?
Any opinions on those two tires?

285's will fit fine on your stock rims. I have them on my 03. For your driving and beach driving, I would go all seasons. I learned in DE that off road tires dont do well in the sand.
285's fit fine - I also had them on my 03. You should look for 285's that are Load E range which will narrow your search. I have always switched over to AT's as the all season tires are just junk. You will be happy with the switch and not miss the all seasons. I ran BFG KO's for many years and they were a good tire. Now for my 08 I have Nitto terra grapplers 285's and love them too.
I have a 2003 with the 7.3. I run 285/75/R16 Nitto Terra Grapplers. I love them. They fit great (stock height and rims). I live in North Carolina on the coast and I am always on the beach with them and they work awesome.
After reading some recent threads, I am down to BFG AT KOs if I want to go with aggressive tread, or Bridgestone Revo2s with what appears from pictures on the internet to be less aggressive tread.
I don't think I'll go too far wrong either way.
Regarding consequences of the bigger tires, I assume I will lose a little bit of power/mileage, and that my speedometer and odometer will be off a little.
Do bigger tires make it appear that you are going faster than you actually are, or slower?
I will say that when I was running 285's on my stock 7" wheels I had play with the air pressure a little or they'd wear the center very quickly!! Most 285's are recommended for no less than a 7.5" wide rim. This is why I ended up going to a 255/85/16 before swapping out rims. They're still 33" tall like the 285's but narrower to fit the rim better.
