I just bought a 2000 XLT 5.0, AT, AWD with 101K miles. I don't know the history of the truck, but it appears to have been well kept. When I accelerate from a stop, it hits a flat spot/hesitation when the RPMS are around 1200-1500. Once beyond 1500 rpms it is solid. I'm am getting a P0401 code (Insufficient EGR Flow) occassionally, but I'm not sure it's related. After I reset the code, it will run for a couple of hundred miles before it kicks the code back on. The hesitation/flat spot problem is there all the time.
The IAC valve is one option but first look in to the EGR system. Check the EGR valve. The pressure control vacuum switch and the vacuum control module. The last two are notorious for going bad. If the code keeps coming back then it is one of these issues that needs to be addressed. The IAC valve is to control low idle speed. Should not affect the actual acceleration. One other thing to remember is that if this is only in one gear then it could also be a solinoid going bad in the trans.
I am not sure about the procedure on checking those. I don't normally work on transmissions. I can diagnose them but fixing them........LOL. best thing to do is take to a trans shop an have them check it for you. Does seem like a solenoid though. Let me know what you find.
