Ford '51 V8 1 ton stake truck

I'm new to this and don't want to make all of the mistakes, but recently ran across a totally restored (engine, interior, paint) 1951 1 ton stake truck. What should I look for to determine originality, integrity of the truck, etc. Thanks!
