I finally got a chance to go under the hood today and guess what...LOW coolant in the rad and reservoir tank. How low? I'm not quite sure, but the tank was empty and there was no coolant to be seen in the rad. Good thing I rarely drive the truck (not my daily).
I am going to do a total flush this weekend...should I just replace the system with green antifreeze with the anti-cavitation additive (hooray for research!), or can I go with the extended life stuff (seems it may only be for powerstroke diesels?). I'm going to do a search right after I hit "Submit Reply"...but any input would be awesome!

no no no no no green antifreeze! Go to the ford dealer, or international dealership, and specifically ask for their diesel engine coolant. Give your engine model to them, your engine is common in other internationals (IE big chassis uhauls used them, even international box trucks/etc of the same vintage, school buses, etc) A 1979 bluebird wanderlodge (with a caterpillar 3208 diesel) I recently walked from because it used only green (prestone) antifreeze in it, radiator wasn't full to the top, and when a sample was taken it was a disgusting murky vomit green color....
regular antifreeze is the kiss of death in a diesel pickup, no matter what the engine! In the case of the caterpillar, a cherry/magenta color is what should have come out, not gasser engine vomit green! (not saying the ford would have that color, I haven't been able to own a diesel yet but i've researched a ton about them)
I seriously hope your engine does not have cavitiation eating it's cylinders and engine block alive. If that's what it has had all it's life, plan on replacing that engine and getting a horribly expensive repair bill.....
