I'm worried about the tongue weight. The trailer I'm pulling has a forward kitchen and the tongue weight is 1230#, but that will go up as you load with pots, pans, canned goods, fill the fridge etc.

An '05-'07 SRW will have this hitch:
As you can see on the label, your tongue weight with weight distribution is 1,250#. So you will probably be a little over that. Most people think the OEM hitch can handle more than the rating, so you can choose to ignore the rating and go with it. Or, you can pick up an aftermarket hitch that has a little higher rating. Your decision.
I would have to know more about the other specifics of the trailer to make my own decision. Like what is the GVWR of the trailer? Some of them have a heavier % tongue weight than others. About 10% is the minimum, but some go as high as 25% with the axles back pretty far. I would feel better about the latter than the former.

I was in the same boat as you with tongue weight. The total trailer weight of my TT was around 11k so no worries there, but tongue weight was listed as 1080 dry and we know what dry means. I upgraded to the Reese Titan 2.5" receiver seen here etrailer.com | Ford Trailer Hitch by Reese for 2009 F-250 and F-350 Super Duty - 45297 It can handle 2500 on the tongue with weight distribution. Was a nice upgrade and I'm glad I got it. Bought a sure line tongue weight scale a little while back. Trailer was 1400 on the ball. And I was able to sell my stock hitch in the classified's here on FTE which defrayed the cost by 25%. For $300, it was a good investment and piece of mind.
If you go with that 2.5" receiver (a good idea IMO) be sure to get a WD hitch that is also 2.5". If you use the adapter sleeve and a 2" WD hitch, you will lose benefit of the higher rating.
