One of my life long dreams was to be a chef... worked some time doing so but was disenchanted with the masses of unappreciative herds of strangers so my career path changed. I still enjoy my culinary endeavors but with smaller groups and family...

Tonight gonna be grillin' a flatiron...started preferring the flatiron over the flank or skirt steak. Though none of these are actually steaks, per se.. and each a great if marinated and grilled medium rare and not much more. The flatiron is now what I like to marinate and grill. Watch for sales at around 4.99 per lb. If anyone is interested... I will post the marinate I like to use.

With the flatiron we will be having a corn salad.. fresh off the cob with onion, jalapenos, and a touch of vinegar and tequila. Further complimented with brown rice with red peppers.

Nummy!!!

I've been craving a pot of Pintos, so I have on summering on the stove,,, with ham bits and sweet onions. Gonna make some corn bread and call it good!!

What is a fun touch with the corn bread is to add some chopped jalapenos to the mix and add a touch of Parmesan or cheddar cheese to the top before baking... gives a nice zing along with a nice brown, cheesy crusty top.

OMG yes! Casey, I have to say that is the best! I had dinner over at my boss' house once, and he made that exact thing with some melted cheddar on top... was awesome with homemade chili con carne.

Hhhhmmm,, Gonna have to try that!! I always add sugar and vanilla to my mix and sprinkle brown sugar on top before baking!! Can you tell I like it sweet?? LoL!! I bet the cheesy top is great!! I love browned cheese!!!

...a touch of brown sugar in the pinto beans is good too. Brown sugar goes good in many things, especially hot buttered rums.

In spaghetti sauce too!! Takes that slight bitter twang away from all the tomatoes!!

Yes, very true. Sugar based additions to tomato sauce cuts the acid but also makes the sauce a bit to sweet for some folks. To cut the acid, and not add sweetness... then use just a pinch of baking soda towards the end stage of cooking your spaghetti sauce. Just a small pinch, does not take much. Will be a little bubbling as the baking soda neutralized the acid.

Also baking soda is good to use when soaking your beans... softens the beans up a little faster and takes away some of the fart gasses.

Just a couple of culinary thoughts...

Tonight...gonna grill some chicken legs and thighs. Wanna try a new flavor sauce: Sweet Baby Ray’s Honey Chipotle. Also going to throw on some cob corn, brown/wild rice combo, and make a garden salad.

If you add a can of tuna to the chicken flavored, it's really good.. Even better when you throw an egg in it too.. It may sounds gross, but it's good.. Could always do a can of chicken too..
