I just bought a 2010 f-350 w/6.4 traded my 2005 f-350 w/5.4 I've never owned a diesel before so I do not know if this is normal. but when i take of there is a lag as i start to go and then it will take off big time and i have to back off just wondering if it is something i have to get used to

yes, this is the turbo lag.. just have to get used to it.
If you stand on your brake and slowly throttle up until you get to roughly 1500RPM or 10lbs of pressure in your turbo, then as the light turns green, quickly release the brake and hammer down on the throttle, you won't notice any turbo lag. Plus, you'll smoke most cars off the line. It's fun to do but, can get expensive if you do it too much and end up breaking loose the tires. Trick is to not break the tires loose. So you'll roll through with maximum traction.
I found out about the lag when I got stuck in some snow here. I went to rock it back and forth and hit the throttle to spin the tires to get moving and it wouldn't go.
Two things that help this are a Banks intake and Spartan or other DPF delete kit. You will still have some lag but seems to me its about 30-40% less than factory. I've put the truck back to factory twice and the lag drives me crazy.
Yep, powerbrake it. Your left foot no longer has nothing to do! Just make sure you set your brakes FIRMLY, anything in front of you when that thing launches is in great danger.
