I am going with carpet in my 78, but then it is just my weekend play toy, if I were using it for work or such I would probably go with the mat for the easy cleaning
Rubber mats are alot easier to clean, like mentioned above. But...In my 79 I went to Lowes and bought some black outdoor carpet (looks like artificial turf) and with a drain hole in each floor pan I sprayed it out with a hose. This was a logging truck however, definately not a show truck.
Mine is my everyday driver (plans to be once I get all the hickups worked out). I went with Carpet I ordered online! Installation was easy, did it myself...but like mentioned above, if it was an "outdoor work" work truck, I probably would have gone with mats. Mine is a work truck, but I am a Children's Minister, so not too much grime and grit involved in my work! One thing I did on my truck before I installed the carpet...I sanded it all down, primed it, coated it with undercoat, then noise damper materials, just to help with road noise! Does make a difference! IMO
I have a mat for a daily driver but what I don't like is it don't cut down on road noise like carpet would do. Another thing is carpet when it gets wet it will trap the moisture underneath and rot the pans, rubber mats can just be lifted up to wipe down the pans.
I like carpet in my 79s. Insulates and just looks nicer. I have about 6 of them that I use for work and I have cattle and horses and pull stock trailers so as you might guess sometimes the feet are not so clean when you get in. I found that I like a good quality floor mat, the ones with the deep ridges in them. They hold water and crap you drag in, then you take them out, hose em down and carpet is still clean.
