I smoked it with Hickory chips but it takes half the chips as pork or beef. I have a propane smoker and I have been happy with how it does.

My dad smokes fish quite often. I think he likes to use apple wood.

Yes, it was a new to me recipe. I think I will keep it. The joints just fell apart and the brest was tender and juicy.
