Also its not air or the thermostat that does it.. My white van is down 4" in the rad and the gauge is steady..

How weird, in the recent past, I have had a really strange "percolation" (thumping) sound at times that I could never pin down. I did replace the pump (a rebuilt Motorcraft unit) with an aftermarket and the noise has not recurred.
Ive noticed that if the engine is low on coolant to the extent that the sender is not in the coolant needing approx a half or more coolant to top the gauge still reads at the a in normal. This condition still happens after changing the sender and checking the gauge. This i think causes a lot of heads to crack including mine. Ive had to put a new head on the pass side. 4.0l.
Mine just goes from the N to the R and does it over and over.. Coolant is full..
Bad Thermostat, or bad water pump impellor? I had this exact symptom last fall, blew a heater hose because of it. I changed the t/stat & gauge is now rock steady. Engine now runs at 195* before it would travel up to 210/215 before opening.
Ok so listen to this: My wifes white van goes up to 177 deg and stays there rock solid..Its got a 190 deg thermostat new..Mine goes to 200 back down to 180 all day..
My wifes must not be closing I guess...I'll have to check my green van when I get it out of the garage. I think that one goes up and down a little...GRRRRRR
