Ok hunters, fisherman, grillers, bartenders, professionals and casual cooks, post your favorite recipes and share with the rest of us. Sometimes food ideas get stale and it's cool to see what other are eating and drinking to liven things up a little. We don't need specific weights and measurements just the general idea if that what you want to provide.
Here's one of my favorite lunch sandwiches:
4-6 ounce Boneless / skinless chicken breast. Hammer the breast with a meat hammer or the back of a knife blade. Set aside.
Make a breading consisting of flour,parmesan cheese and any combination of heavy or light spices that you like.
Dip the chicken in a milk wash then roll in the spice/flour mixture.
Layer in a frying pan or a flat top grill with very light oil and cook until golden brown on both sides. Just a couple of minutes on each side at med-high heat.
Take an onion roll or your favorite type of bread or roll and toast it with garlic butter.
Lay the chicken in the bread with jack cheese, lettuce, tomato, onions and pickles and dress as desired.
This goes well with fries, onion rings or chips and any assortment of ice cold beverage that you can imagine.
When popping pop corn, put a few drops of your favorite hot sauce in the oil. Depending on how much you put in you'll cough, your eyes will burn and the wall paper may peel while it's popping but it'll be some of the best corn you'll ever have.
Take a pineapple and slice in half lengthwise. Using a filet knife, cut down both sides of the core but don't cut through the rind - then, by working the knife between the fruit and the rind, start cutting the fruit out - try not to slice through the rind. When you're done, you should have a hollowed-out rind and some fruit - chop the fruit up and mix with other fruits of your choice. Dump the fruit mixture back into the rind, using it as a bowl. Top as desired.
