which 300

I have the opportunity to get one of 2 engines, but not sure which to get. First motor is a 78 out of an F150 with less than 110k miles. The second is an 89 out of a F150 with 73k miles. The motor will go into my 76 F250 and will be mated to a ZF 5spd.

The 300 is a high mileage engine so both of those have "relatively" low miles. I would say the decision is much more based on you, than what we can provide you. The 78'll be carb'd and the 89 is fuel injection, so which ever you want to have. Both'll have the same fitment in the truck and to the transmission.
The other consideration is how well the engines have been taken care of.

The 78 should be "Plug and Play" since it's already carbed and has the DS2 dist.
The 89 could be made to work, but the EFI system would require a lot more effort to either remove and go carb, or to make it fully functional. Even though the EFI can be totally removed, and the older carb intake and DS2 dist can be installed, it lacks the fuel pump mounting location, so you would have to use an inline electric.

Thank You! I wasn't sure if one motor would be better than the other. So I guess it comes down to what I'm willing to work with.
