If we are having glow plug or GPR problems, would the plug light still function just as it would without any problems? Other than staying on a little longer (I assume colder temps require longer warmup time) that part of the truck is working just as normal.

Yep. The light will not indicate any problems with the system. These might include poor contact inside the GP relay and GPs on their way out or dead.
Let's be clear. There is no "plug light" unless you put one in. Do a search on "GPR LED". That is why people put that mod in, it will tell you that your GPR is sending power to the Glowplugs. I think you are refering to the WTS or Wait To Start light (the loop shape on the dash). LS1_SEVEN is correct, an illuminated WTS does NOT mean your glow plugs are glowing.
Little update, it was slightly warmer this morning (44F vs. 38F) but regardless, after waiting for the glow plugs for about a minute (instead of just waiting for the light as yesterday), truck started fine so it seems everything is working fine.
One thing I was worried about was the diesel. I've heard that one problem with biodiesel is that it gels at low temperatures. I didn't know if the new ULSD might have those problems.
Yeah, there is something else going on. I have no problem starting my '03 at -10F when unplugged and just waiting for the glow plug light to go off. I have never cycled my glow plugs multiple times. The past week the temp has been between +5F and -25F and there has been no issues starting. It whines a little and runs a little rough for the first few minutes, but after I let it idle for a few minutes it is ok to drive. I am using a 15W-40 Synthetic.
If you are worried about fuel gelling, I would suggest that you use an additive to prevent gelling. You should ask your gas station if they use a winter blend of fuel. Up here, they pre-mix the fuel to help preventing gelling.
