Well Over the weekend I had to move a Friends 35 Ft and about 16K cargo trailer. I would have rather moved it with the 6.0 or 6.4 witch both have quite a bit of more power but I was stuck moving it with the 7.3 cause that's what I had with me. It seemed that going down the road on flat land in 80 Tow (Its the lowest I have) the Exhaust temps were at 1,200-1,300 going 60. If I switched to stock the temps were around 1,000 still So I took it out of O/D and the EGT were around 900 going 65 in Od but the RPM's were around 2,500 to 2,700. IS that ok for the 7.3 to rev that high for about 25 Min? I know on the 6.0 and 6.4 thats the sweet spot but is that so high for a 7.3 to run at? Also there was one big grade I needed to go over was it ok to be at 2,500 for about 3 min?

I don't think the rpms were as much of a concern than the EGTs. I would prefer the higher rpms over the high EGTs. No harm should have been done. Duallys with 4.10 gears rev a bit higher all day long. I bucked some wind once while pulling my 35 ft 5ver and had to use Drive for over 30 miles with no adverse effects. Still had my SCMT back then.

You should see the work that my truck puts out when towing the trailer.
It takes on a whole different personality than when empty and the turbo screams as it is pulling the hills at 2500 rpm.

You need a 60 tow program. 60 tow would not have let your EGTs climb that high for what you were doing.

I couldn't agree more with this comment. Hey Nick, on my way down to RRE-Y2K09 this past summer I had my truck loaded up pretty good not to mention our 8000 pound trailer in tow and in the 60 tow was pulling up and down those grades(Smoky mountains) and even had to drop it out of OD a couple times and it never skipped a beat. You are fine.
You've gotten plenty of responses to make you feel better about it, but just wanted to chime in to say that I run just like that pulling the camper in my signature. I don't have a chip or tuner, but your stock numbers sounds almost identical to mine. I agree that I wish the truck had more power when pulling the hills, but I'd rather go slow than be on the side of the road in something other than a 7.3.
60 mph, in OD is probably in the 1500 rpm range. That would be exactly why your EGTs were so high. If your trailer weighs 16k, and your truck in the 7500 range, your grossing 23,500, which is infact alot of weight. 3rd gear is your friend. Over 2,000 rpm while pulling heavy is much better for EGTs.
