Sputtering?

I was driving to work yesterday and my truck started sputtering. It idles and starts great but when I hit the gas it kinda "sputters". Only while I'm accelerating though. It doesn't do it when I'm at a light or when I'm holding a steady speed. And it doesn't do it continuously. It kinda comes and goes. I guess it's a little harder to explain when I can't make the sound. If it helps I have a 300 inline 6 with C6 3 speed.
I changed the fuel filter today but it made no difference.
Any ideas?

I would look for a vacuum leak and check the acelerator pump by looking down the carb with the engine stopped and open the throttle you should see a squirt of fuel when you open the throttle. If you don't the pump is shot and will need a new diaphram. The engine needs extra fuel during aceleration and the pump provides that.
