I have heard alot of the aftermarket t-stats are bad out of the package. believe I read where someone here tested theres by dropping it in a pot of boiling water to see if it opens. That would be my best guess.
I always leave the heater hose off the top of the waterpump to let the air escape while filling the reservoir. I connect the hose when the coolant just starts coming out. When I fill it up and let it warm up, I usually don't have to add much at all.
Did the truck try to overheat or are you just concerned with not getting any more coolant in there?
if it doesn't overheat then i would say that your t-stat is opening. you would heat up pretty quick if it wasn't. just keep an eye on it and keep it topped off and i think you will be fine.

Isn't it a problem that I have 4 gallons of concentrate ELC coolant and only 1 gallon of water?
It has not tried to over heated.. it got to normal temp and hasn't moved since.
Ford wouldn't have given me a short stem thermostat would they?
The thermostat would still open, even if it was a short stem. It just wouldn't close the internal bypass hole in the W/P when it fully opened. What part number did they give you?

Not if there was some water already trapped in the block from not draining the passenger side. Even when draining both sides of the block, I don't recall being able to get a full 8 gallons in there. I couldn't account for what stayed in the block.
Theres definitely still some in there from not draining the passenger side. I went through the same deal, but I just kept 2 gallons of distilled water in the truck and checked it once a day to make sure the level hadn't dropped.
