carb backfire

1.I have a 72 F250 4x4 with a 67 390 2v totally stock and not rebuilt. I put on a 500cfm holly 2bbl a few months ago. It has run really good for me except the other day i was on the interstate doing about 60mph with a light load (maybe 1000 lbs) and a small hill came up so i gave it a little more gas and it started backfiring out of the carb a few times. Why did it do that? Is it cause of too low of octane gas? Or is the carb not adjusted correctly?

2. This past summer I was driving the truck and got it warmed up and then shut it off. After about 20 I'd go to start it and it will start right up but won't idle unless i choke it a little bit. I know its not supposed to be like that, why does it do that?

3. One other question on this carb too is its got a manual choke that i really like but after its all warmed up and i drive down the interstate about 5 miles or so i look down and the choke somehow seems like it is pulled out and i have to push it back in. How can i stop it from doing that?
