Have you checked fuel pressure? You may also want to check your throttle positioning sensor- sometimes they get worn out in a certain area and cause poor performance- it's usually at idle or when you're at speeds you drive on a daily basis, but I've seen them go bad in between those areas as well. Let me know if you don't know how to do it- I'll look up the procedure for you in my service manual.
Reference fordfuelinjection.com, and look up the throttle position sensor. While you are read up on how to pull the codes with a paper clip, or short piece of wire. It is also a good idea to pull the codes even if the truck doesnt have the CEL lit. You will also need a Digital Multimeter.
alxsnmr is right- go to fordfuelinjection.com and follow their procedure for checking TPS. Compared to the one in my service manual it is less confusing- the one in my book is the kind of procedure I'd need to be right there at the truck to perform. FFI.com is much simpler... or at least, better explained.
