run-ability issue

run-ability issue
I have a 2003 6.0 liter F-250 which has developed a couple of run-ability issues.
First... it will not get out of it's own way until the temp comes up above the cold line on the gauge. I have to let it warm up for about 10 minutes or so, even on days that the ambient air temp is 90+.
Second... while on the highway and beginning a slight incline, the truck begins to buck a little, if I give it more throttle this goes away.
The truck has 173k miles on it and has had the basic services done on a regular basis. I have owned this truck since 2005 and have not noticed these issues until recently. They do appear to have gotten worse since moving from Phoenix to Oklahoma last winter. Any help would be greatly appreciated.
